There is no trash/recycle bin on the ipad which allows you to restore deleted items - once a note is deleted the only way that you may be able to restore it is to do a restore via itunes (but that assumes that the note was on the ipad when you last backed it up, and that you havn't created any other notes since the backup, as i think that the restore would remove them)..
